Citrus gastrique

This Sauce pairs well with Roast chicken and Duck breast. To make 4 servings:

  1. Heat 1/3C sugar until deeply caramelized.
  2. Meanwhile, toast 1/3 star anise pod, then take off heat and add 1/3C red wine vinegar.
  3. Combine. Reduce by half.
  4. Zest 1 orange, 1 lemon, and 1 lime; set zest aside.
  5. Juice citrus into saucepan and reduce by half.
  6. Remove from heat. Remove star anise. Stir in zest and salt.
